The fixed pots range is the most extensive in Baratta S.r.l.’s production, offering a variety of models that allows you to choose the right pot for every productivity, space, and energy consumption need.
To maximize your options, our production is divided into different categories: round or modular pots with either direct or indirect heating.
Indirect heating is defined as the process where the heat source does not come into direct contact with the cooking vessel. The pot is surrounded by a water jacket in which steam is generated. This steam transmits heat to the pot and the food being cooked. This method ensures uniform heat distribution across all surfaces at a temperature just above 100°C, ideal for delicate cooking with low thermal impact. It allows food to be cooked without the fatty parts, which stick to the sides of the pot, burning and imparting an unpleasant flavor. It also makes it easier to remove these residues, simplifying cleaning.
Direct heating is generally not recommended, but if desired, we can accommodate this request.
Pots with direct heating lack the water jacket, and the burners directly heat the bottom of the pot, reducing boiling times. However, the thermal impact is much higher, so this method is not suitable for cooking fatty foods or items that could stick and “carbonize” on the sides of the pot.
Fixed pots can be round or rectangular. The rectangular ones are called “modular” because their shape allows them to be placed next to kitchen equipment from others manufacturers.
Available in capacities ranging from 55 to 600 liters, a range of accessories facilitates their use and increases productivity.
The autoclave lid, which can be installed on the entire range, increases pressure during cooking, resulting in a higher temperature. This reduces cooking times and energy consumption.
