In order to handle acidic products, the components in contact with the cooking product are made of AISI 316 stainless steel. The SPEM-E series comes with food-grade Teflon scrapers on the bottom and walls of the tank. The core probe regulates the correct cooking temperature for each type of dish being prepared.
The pressure in the water jacket is regulated by a special safety device complete with a pressure gauge. The maximum pressure varies based on capacity. Models with a capacity ranging from 100 to 220 L allow up to 1 bar of pressure in the water jacket.
