Baratta professional boiling pans are the ideal solution for galleys of all sizes. Available in various models such as fixed, tilting, and mixing, our equipment covers a wide range of capacities, from 40 to 500 liters, to meet the needs of both small and large galleys.

Designed with front maintenance, there is no need to move the boiling pans from their position for technical interventions, making management more practical and faster. The mixing versions feature an AISI 316 stainless steel tanks, a material resistant to acids and salt, perfect for handling a wide range of food products.

Functions and Use of Professional Boiling Pans

Baratta professional boiling pans are primarily designed for cooking in water, up to boiling temperatures of 100°C. However, some models are equipped with an autoclave lid that allows them to operate at higher temperatures, reducing heating and cooking times. This makes them ideal for various applications, from preparing vegetables, pasta, rice, and sauces to more complex dishes such as cured meats and creams.

Indirect Heating for Perfect Cooking

Our indirect heating technology is a distinctive feature of Baratta boiling pans. Between the cooking tank and the heat source is situated a water jacket containing distilled water, which, when heated, generates steam. This system prevents direct contact between the product and the heat source, ensuring gentler and more even cooking, reducing the risk of burning, and preserving the product’s quality.

Our Tiltable Boiling Pans

In addition to fixed boiling pans, we have been producing a line of tiltable boiling pans for onboard use for years. This special type of equipment features a tilting system, which can be either automatic or manual, designed to assist in removing the final product. The mixing system allows easy tilting of the boiling pan, minimizing the risk of burns and improving operational efficiency. The tiltable design also makes space management in the galley easier, allowing for quick movement of food during preparation and storage.

Automatic Mixing System for Excellent Results

The latest line of Baratta boiling pans includes those with mixing capabilities. This specific type of equipment features an automatic mixing system, adjustable via an electromechanical control panel or a touchscreen panel, depending on the chosen model. Thanks to this system, the product is continuously mixed during cooking, ensuring even heat distribution and preventing lumps or burning. Continuous mixing facilitates the preparation of complex dishes such as creams, sauces, soups, and dishes where consistency and texture are crucial. Our mixing system delivers perfect results with minimal effort from the operator, improving productivity and reducing the risk of errors. Accessories are also available to simplify boiling pan operations.
