Our professional boiling pan is equipped with an indirect cooking system, characterised by a water jacket located between the cooking tank and the counter wall. Distilled water is fed into the water jaket, which, when heated, produces steam. The steam gently transfers heat to the product being cooked, ensuring that it is evenly distributed over the surface of the pan.
In addition, the cooling system allows the product to be cooled immediately after the cooking process, drastically reducing the waiting time for storage to start. This is particularly useful for foods that require a rapid temperature drop to maintain their organoleptic properties and to comply with storage regulations.
The mixing arm, made of AISI 316 stainless steel, ensures constant and uniform stirring throughout the cooking cycle, while scrapers on the bottom and walls of the pan prevent food from sticking or burning. The electric tilting system facilitates emptying the pan, reducing the time and effort required.
The cooling system is designed to act quickly at the end of the cooking cycle. The hot water in the water jacket is drained and replaced with cold water, ensuring a rapid and controlled drop in temperature. This process allows cooking and cooling to be managed within a single appliance, with the digital memory recording and managing all operations.

Made of AISI 304 stainless steel, our products are designed for robust construction and long service life. The bottom of the pan is made of AISI 316 stainless steel, a material that is highly resistant to attack by salt and other corrosive agents. The rounded shape of the bottom and its special construction facilitate both emptying and cleaning, two essential operations to ensure efficiency and hygiene.
