Design and Functionality

Our SPEM-REP is equipped with an indirect pressure cooking system, featuring a water jacket located between the cooking tank and the counter wall. Distilled water is introduced into the water jacket, which, when heated, produces steam. The steam gently transfers heat to the cooking product, ensuring even distribution across the surface of the tank and allowing higher temperatures to be reached in shorter times compared to traditional electric boiling pans.

Additionally, the cooling system allows for rapid temperature reduction at the end of the cooking process. This process is particularly useful for foods that require a quick drop in temperature to maintain their organoleptic properties and comply with storage regulations.

Mixing, Tilting, and Cooling

The mixer, made of AISI 316 stainless steel, ensures constant and uniform mixing throughout the cooking cycle. The scrapers on the bottom and sides of the tank prevent food from sticking or burning. The electric tilting system facilitates the emptying of the pressure boiling pan, reducing time and effort required.

The cooling system is designed to act quickly at the end of the cooking cycle. The lid is made of AISI 304 stainless steel. A special device balances its weight, making it easier to open. The entire SPEM-REP pressure boiling pan line is equipped with a motorized system, controlled by a two-hand safety control, allowing for easy opening.
The Baratta Supermix boiling pan series is equipped with a digital panel to manage all equipment operations. Over 100 recipes can be stored and reproduced to run the various preset cooking cycles, all fully autonomously.
In order to handle acidic products, the components in contact with the cooking product are made of AISI 316 stainless steel. The SPEM-REP series comes with food-grade Teflon scrapers on the bottom and walls of the tank. The core probe regulates the correct cooking temperature for each type of dish being prepared.
The pressure in the gap is regulated by a special safety device complete with a pressure gauge. The maximum pressure varies based on capacity. Models with a capacity ranging from 100 to 220 liters allow up to 1 bar of pressure in the gap.
On request, we can install a quick drain cock. The DIN50 connection allows the electric boiling pan to be connected to a container, a packaging machine, or a transfer pump.
