The PRAF-V series boiling pans with cooling manage the stages of the process autonomously, thanks to the programming set through the touchscreen panel. They are equipped with advanced devices for controlling temperatures, times, and mixing speed, allowing for precise and automated management of each cycle. The construction of the steam boiling pan is particularly refined: the sheets, surface finishes, and component placement are designed to make the machine not only easy to use and clean but also aesthetically pleasing.
The PRAF-V series produced by Baratta includes models with capacities ranging from 100 to 500 liters, but there are also high-production models with capacities up to 1450 liters, designed to meet the needs of industrial kitchens requiring high production capacities. The wide range available allows for selecting the model best suited to every space, productivity, and energy consumption requirement.
Indispensable in cooking centers that produce food for storage, the steam boiling pan with cooling is ideal for quickly cooling products, minimizing waiting times and improving efficiency. At the end of cooking, the machine drains the hot water from the jacket and allows cold water to flow in through a dedicated external cooler. When the preset temperature is reached, the machine notifies the operator, who can then drain the product, ready for storage. The mixing boiling pan process is controlled by a program set directly on the touchscreen panel, following the exact times programmed by the operator. Each stage is stored in the digital memory, and it will be enough to recall the desired recipe from the 100 available to start the cooking and cooling cycle fully autonomously.
