The professional boiling pan is equipped with an indirect cooking system, featuring a water jacket located between the cooking tank and the counter wall. Distilled water is introduced into this water jacket, and when heated, it produces steam. The steam gently transfers heat to the food being cooked, ensuring an even distribution across the surface of the tank and allowing higher temperatures to be reached more quickly than with traditional steam pans.
Additionally, the cooling system allows for rapid lowering of the product’s temperature at the end of the cooking process. This is especially useful for foods that need a quick temperature reduction to preserve their organoleptic properties and comply with storage regulations.
The mixer, made of AISI 316 stainless steel, ensures constant and uniform mixing throughout the cooking cycle. Scrapers on the bottom and walls of the tank prevent food from sticking or burning.
