Fixed Pots – Round and Modular

Baratta S.r.l. offers one of the most extensive ranges in the industry, with a variety of models designed to meet every need in terms of productivity, space, and energy consumption.

To maximize choice, our production is divided into different categories: round or modular pots with either direct or indirect heating.

Indirect Heating

Indirect heating is defined as the process where the heat source does not come into direct contact with the cooking vessel. Instead, the vessel is surrounded by a water jacket within which steam is generated. This steam transmits heat to the pot and the cooking product. This method ensures even heat distribution across all surfaces, maintaining a temperature slightly above 100°C, which is ideal for delicate cooking with minimal thermal impact. It allows for cooking without burning the fatty parts that stick to the pot’s walls, preventing unpleasant flavors. Additionally, it makes it easier to remove these residues, facilitating cleaning.

Direct Heating

Direct heating is generally not recommended; however, if requested, we can provide this option.
Pots with direct heating lack the water jacket, and the burners directly heat the bottom of the pot, reducing boiling times. However, the thermal impact is significantly greater, so this method is not suitable for cooking fatty foods or any items that might stick to the walls and “carbonize.”

Different Shapes

Fixed pots can either be round or rectangular. The rectangular ones are called “modular” because their shape allows them to be easily integrated with other kitchen equipment from different manufacturers.

Available in capacities ranging from 55 liters to 600 liters, a range of accessories makes these pots more user-friendly and boosts productivity.

Pressure Cooking

The autoclave lid, which can be installed on the entire range, increases pressure during cooking, raising the temperature accordingly. This process reduces both cooking times and energy consumption.
