The PRAF-V series professional boiling pan have been designed to meet our customers’ needs when fast cooling of the product right after cooking is required, allowing for immediate storage. For this reason, we have created a machine that can perform two opposite processes in succession: cooking and cooling. The PRAF-V series steam boiling pans manage the different stages autonomously, thanks to the programming set on the touchscreen panel. They are equipped with all the necessary devices for controlling temperatures, times, and mixing speed. Great care is taken in the processing of the sheets, the finishing of the surfaces, and the placement of components and various systems to make the machines easy to use, simple to clean, and aesthetically pleasing. The PRAF-V series produced by Baratta includes models with mixing capacities ranging from 100 to 500 liters. The wide range of options allows you to choose the right model for every productivity, space, and energy consumption need. Essential in cooking centers where food is produced for storage and needs to be cooled in a very short time, Baratta s.r.l. manufactures a line specifically designed for this application. At the end of the cooking process, the machine drains the hot water from the jacket and allows cold water from a dedicated external cooler to flow in. When the preset temperature is reached, the machine notifies the operator, who can then drain the product, ready for storage. The mixing boiling pan process is controlled by a program set on the touchscreen panel, ensuring that the operator’s specified times are strictly followed. Each stage is stored in the large digital memory, and upon startup, it will be enough to recall the desired recipe from the 100 available, and the boiling pan with cooling will be ready to perform cooking and cooling fully autonomously.
