Like any professional boiling pan, the PVIM models maintain the characteristic design of the water jacket, which surrounds the cooking tank. Distilled water is added inside the tank, and once heated, it produces steam. The steam transfers heat to the cooking product evenly and gently, thanks to the uniform heat distribution across the entire surface of the tank.
The mixing arm, made of AISI 316 stainless steel, is equipped with scrapers on the bottom and sides of the tank, ensuring perfect mixing.

The lid is made of AISI 304 stainless steel. A special device balances its weight, making it easier to open. The high-production PVIM models feature a motorized lid with two-hand safety controls.
The PVIM series is equipped with a control panel featuring electromechanical components. Precise and reliable, they are easy to replace in case of failure, ensuring continuous operation without worries, all while operating completely autonomously.
In order to process acidic products, the components in contact with the cooking product are made of AISI 316 stainless steel. The PVIM series comes with food-grade Teflon scrapers on the bottom and sides of the tank. The heart probe regulates the correct temperature for each type of food during cooking.
The pressure in the cavity is regulated by a special safety device complete with pressure gauge. Maximum allowed pressure: 0,45 bar
On request, we can install a quick drain cock. The DIN50 connection allows the professional boiling pan to be connected to a container, a packaging machine, or a transfer pump.
