Simple and intuitive, yet precise and reliable. The touch screen panel is easy to program and stores all process stages. A simple touch on the screen recalls the desired recipe, with the machine ready to execute every preset command with precision, ensuring consistent product quality. At the end of the cooking process, the program activates the drainage of hot water from the gap and opens the valve for the flow of cold water from an external cooler, thus completing the cycle.
The tank is made entirely of AISI 316 stainless steel, allowing it to cook even acidic foods and offering high resistance to the corrosive effects of salt. The mixing arm, also made of AISI 316, keeps the surfaces clean and facilitates the mixing process during the different stages. Additionally, the arm can be rotated in both directions.
During the various stages of the cooking process, the product temperature is constantly monitored by a sensor placed inside the tank. This tool is essential for ensuring that both cooking and cooling occur at the correct temperatures.
A range of accessories is available, such as the “horizontal wings,” which are applied to the mixing arm. Thanks to their slight inclination, they push the product upwards, helping to circulate it and ensuring that it comes into contact with the heated surfaces more evenly, thus making the cooking process more uniform.
All Baratta appliances with three-phase electric power supply are equipped with a control device that stops the machine in case of phase inversion, with a warning indicator light.
The lid, made of AISI 304 stainless steel, is equipped with a special device that balances the weight and facilitates opening. The boiling pans with cooling capacities over 300 liters are supplied with a motorized lid. The opening is controlled by a two-hand safety command.
The equipment can be supplied with a hole that allows ingredients to be added during cooking without opening the lid, or to control the correct mixing speed. If left open, it facilitates the release of steam, promoting moisture reduction in the product. Safety is ensured by a grid that prevents hands from being inserted inside.
